It's Pancake Day!!

Happy Pancakes Day!

Some say it is the best day of the year while others look at it as the last day to 'pig' out before giving up something for Lent. All i cant think of is what topping am i going to be putting on my pancakes this year?
Nutella and Strawberries??
Sugar?
Lemon?
Golden Syrup or Maple Syrup?
Banana and Cream?
Ice Cream?

The List can go on and on.....

This is the recipe for the pancakes i made this year.

Ingredients

  • 150g flour
  • 1/4 tsp salt
  • 2 eggs
  • 150g milk
  • 1/2 tsp vanilla extract
  • butter or olive oil to cook in
Method
  1. Sift the flour and salt together into a mixing bowl. Break the eggs into a large cup, add in the milk and vanilla extract and whisk together until smooth. Add the milk mixture to the flour mixture and stir until no lumps remain.
  2. Let the batter rest for 15 minutes.
  3. If the batter is a bit thick then just mix in more milk to thin it out and to create more pancakes.
  4. Heat 1tsp of either butter or olive oil in a frying pan. Pour in the pancake mixture and cook for 30 secs - 1 minute on the one side or until it starts to set and is golden brown on the underneath. Then flip it over by using a spatula and cook for a further 30 secs - 1 minute before serving with your topping of choice.
  5. Then repeat until you have cooked the amount of pancakes you want, just make sure you keep putting a little bit of butter or olive oil in the pan before putting in the pancake mixture so it does not stick to the bottom of your frying pan.
