The Ultimate Chocolate Fudge Cake

This chocolate fudge cake just melts in your mouth and is every chocolate lovers favourite cake to eat!
Being known as the one in the office that bakes cakes and biscuits i was asked if i could make the bosses 30th birthday cake, no pressure there! When asked what cake to bake her i was told the ultimate chocolate fudge cake was the only option.

Here is the recipe for the Ultimate Chocolate Fudge Cake:

Ingredients

50g sifted cocoa powder
6 tbsp boiling water
3 large eggs
50ml milk
175g self-raising flour
1 tsp baking powder
100g softened butter
275g caster sugar

Icing and Filling
3 tbsp apricot jam
150g plain chocolate (39% cocoa solids)
150ml double cream

Decorating (Optional)
1 Tube of smarties
4 packs of 4 finger kitkats

Method
  1. Preheat the oven to gas mark 4. Grease two sandwich baking tins and line the base with baking parchment.
  2. Blend the cocoa powder and boiling water together in a large bowl and then add in all the rest of the cake ingredients and beat until the mixture is a smooth, thickish batter. Divide the cake mixture between the two tins equally leveling the surfaces.
  3. Bake in the oven for 25-30 minutes or until well risen and the top of the cakes spring back when they are lightly pressed with a finger. Leave them to cool in the tins for a few minutes before turning them out, removing the parchment off the bottom and letting cool on a wire rack.
  4. While they are cooling you can make the icing. Warm the apricot jam in a very small pan, then spread a little over the cooled base of one cake and the top of the other. Break the chocolate into small pieces and gently heat with the cream in a heatproof bowl over a pan of simmering water for about 10 minutes or just until the chocolate has melted.
  5. Remove the bowl from the heat and stir the chocolate mixture to make sure the chocolate has completely melted. Leave it to cool for while until it is on the point of setting, then spread in on top of the apricot jam on both cakes. Sandwich the cakes together and use a palette knife to smooth the icing on top. 
  6. Add on the smarties, gently pressing them into the icing, to create a design, in this case i used the smarties to create the number 30. Stick the kit kats on the side of the cake with a little of the icing that you use to put on top of the cake. Depending on the height of the cake will depend on whether you need to cut the kit kats down to the right size to fit the cake.
